Summer is finally here, and what better time to switch up your daily meals?

Easy Summer Recipes: Sticky Vegetable Skewers

Whether you’re cooking in the kitchen or outdoors on the BBQ, these colourful, sticky vegetable skewers make the perfect summer dinner. 

Chop a selection of your favourite vegetables — such as aubergine, courgette and cherry tomatoes — into cubes, and alternate them onto skewers. Brush them with the light marinade of honey, mustard and oil, and grill until tender.  

A lovely light main on their own, or a delicious accompaniment to meat or fish, these kebabs are certain to go down well this summer.

Easy Summer Recipes: Watermelon Feta Salad

Tossing in fruit adds a refreshing layer to any salad — and we love this watermelon and feta combination. The refreshing sweetness of the watermelon harmonises perfectly with the tanginess of the feta cheese, making for a delightful summer dish. 

Mix in a little balsamic glaze and a handful of mint leaves for the ultimate flavour combination. 

If you like the idea of adding fruit to your dishes, we also recommend experimenting with grapefruit and pomegranate seeds!

Try Making a Delicious Citrus Salmon Dish

If you’re keen to boost your omega-3 intake this summer, why not give this citrusy salmon a try?

Marinate your salmon fillets in a mixture of lemon, orange, lime and grapefruit, and grill until cooked through. We recommend serving with a side of steamed vegetables and a homemade potato salad for a filling, nutritious meal. 

This is a particularly great dish to serve if you have company; your friends are sure to love it, too!

Easy Summer Recipes: Vegetable Pasta Bake

Vegetable pasta bake is a tasty, quick dish that’s perfect for al fresco dining. 

Simply sauté a mix of summer vegetables — such as courgettes, cherry tomatoes, and asparagus — in olive oil, before folding through cooked pasta and popping in the oven. Finish with a sprinkling of parmesan cheese, and serve with a slice (or two) of garlic bread.

Ideal for outdoor dining, this is an easy, filling and healthy recipe to rustle up any time!

At Macc Care, we understand the importance of staying hydrated, especially for seniors. That’s why one of our favourite easy summer recipes is a sweet, hydrating smoothie.

Perfect for staying cool, this tropical blend of fruits is a refreshing way to ensure you get plenty of essential vitamins and minerals, and stay hydrated in the warm weather. 

Easily adaptable, you can add mango, pineapple, greek yoghurt, coconut water — and whatever else takes your fancy! 

We recommend making a large jug to store in the fridge, so you have easy access throughout the day.
